Slumgulion – My Mom’s Recipe

One of my favorite childhood meals!

My mom worked full time – my dad worked from home and did a lot of the weeknight cooking, but this recipe my mom made I looked forward to every time she made it! We called it Slumgulion – other people may call it American Goulash.

It’s such an easy weeknight meal – ready in 30 minutes or less. I have made this for my family pretty much on a monthly basis for over 30 years. I’m glad they like it as much as I do!

To make it more interesting – I like to mix up the shapes of pasta!

Simple Recipe – even for the novice cook!

Serves 6

Ingredients  

  • 1 pound lean ground beef (96%)
  • 1/2 white onion diced
  • 4 baby bell peppers diced
  • 3 cloves garlic diced
  • 1 tbsp olive oil
  • 3 8 oz. cans tomato sauce
  • 8 oz uncooked elbow macaroni
  • 2 tsp. dried oregano
  • 1 tsp. dried basil
  • salt and pepper to taste
  • 1 tsp. crushed red pepper flakes optional

Instructions 

Add the cooked pasta and stir. Cook for 2 more minutes..

cook pasta according to package directions, drain and set aside.

In a large pot, add 1 tablespoon olive oil. Add the diced onion, garlic and peppers. Saute for a few minutes so they start to soften.

Add the ground beef, and cook breaking up the meat until browned.

Add the spices and canned tomato sauce.

Cook for 10 minutes. One thing I’ve added now is after cooking, I’ll add fresh spinach. Just stack the leaves and roll like a cigar to make a chiffonade (ribbons). So tasty and healthy!
